Avocados and good cheeses make this sandwich a standout. With the beautiful avocados in my fridge, I needed to come up with another reason to serve their creamy goodness. When the avocados have just reached the peak of ripeness, it's hard to resist the urge to eat one right out of its skin. This sandwich is a marriage of flavors and states. I took California avocados and two Wisconsin cheeses, and brought them together on a fresh, whole-wheat bread, grilled with garlic olive oil and thin slices of red onion for color and snap.

Maj. Gen. John Buford was a hard-charging man who didn't like to sit back and watch the battle. He fought intelligently at the Battle of Gettysburg on the ground of his choosing. He battled tactics and troop deployment that gave Union forces under Maj. Gen. John Fulton Reynolds time to come up and place a Union foothold outside Gettysburg, Pa. Had Buford not chosen the "high ground," the Battle of Gettysburg might have had a different outcome. In honoring this man, I came up with a straight forward sandwich using some of the freshest Wisconsin mozzarella I've tasted.

When Wisconsin erupted in labor strife last month, Tri-State residents could watch like audience members at a Jerry Springer show, enjoying the vitriol without fear that they have anything to lose. But the problems underlying the Wisconsin fight are also at work in Maryland, Pennsylvania and West Virginia — and in far worse degree in those first two states. And no matter what decisions ultimately will be made in Annapolis, Harrisburg or Charleston, both public employees and taxpayers already are the losers.
