Most people think a delicious steak dinner involves a large cut of meat, a huge baked potato loaded with sour cream and butter and a large side salad drizzled with insane amounts of blue cheese dressing. If you are eating out that also might include a huge fried onion with a cup of dipping sauce. This salad has all those features with loads of flavor without all the fat and calories. It's simple to make and easy to prepare using a few leftover ingredients from a steak dinner, or starting from scratch with a small bit of steak a few baby potatoes, a little bit of cheese and fresh greens.

Col. Henry Hastings Sibley was a hard-charging man born before the Civil War, and a man destined to deal with the hardships of life in the Midwest. In 1862, Sibley was appointed colonel of Minnesota's state militia and was directed to the upper Minnesota River to protect exposed settlements from the Sioux. His militia were involved in many American Indian engagements last of which was The Battle of Wood Lake in 1862, which ended Indian uprisings in Minnesota. To honor such a man - and at the request of great friend and fellow Civil War enthusiast - I came up with this sandwich.

By Anne Chovey Special to The Herald-Mail Everything old is new again ... so the song goes and so it goes with Hartle's Subs.   The shop, which began way back in 1955, has gone through a lot of changes -- in ownership, in location.  But Hartle's has found its way back home to the South Potomac Street shop with many of the original recipes intact.   As a young working woman, Hartle's subs were a staple in my home. On busy nights with too many things to do, Hartle's came to my rescue on many an occasion giving me and my family a tasty and affordable dinner.
