Home cooking: Linguini casserole, quick and easy

Joan Dawson lives in Smithsburg. She is a retired nurse and a Friend of the Washington County Free Library.

She enjoys reading and makes frequent use of the library. On the WCFL website,, she researches books she wants to read. She requests books to be sent to her local branch, Smithsburg, where she can pick them up.

“I often get brand-new books just published,” she said.

Dawson also is a volunteer coordinator at her branch, which brings her in contact with many people at special events at the library.

This is a favorite recipe of Dawson’s family.

Linguini casserole, quick and easy
1 pound package linguini
22-ounce jar of spaghetti sauce (see cook’s note)
1 pound shredded mozarella cheese
3 ounces pepperoni slices
2- to 4-ounce can of sliced mushrooms (optional)

Heat oven to 350 degrees.
Cook linguini noodles per package directions and drain.
Alternate layers of cooked noodles, spaghetti sauce, pepperoni and cheese in 2-quart Pyrex casserole dish. Reserve some pepperoni and cheese.
Bake uncovered for 30 minutes. Top with remaining pepperoni and cheese, then bake additional 10 minutes.
Cook’s note: Dawson uses Prego Original Pasta Sauce.
