Home cooking: Chopped herring salad

This was my mother's recipe, which I have been using for many years. Each year, after fasting for Yom Kippur, I double this recipe and serve it to a crowd of friends gathered at the home of Carol and Howard Mendelsohn.

Chopped herring salad

32-ounce jar herring in wine sauce

1 apple, peeled and chopped into 1/2-inch pieces

1 or 2 slices of dill pickle, diced into 1/4-inch pieces

1/2 medium onion, diced into 1/4-inch pieces

8 ounces sour cream

1 teaspoon sugar

Rinse herring in water, removing all onions. Pat dry.

Chop herring into 1/2-inch pieces.

In a small bowl, add herring to other ingredients and mix. Serve.
