Salmon patties



Cost per serving is $1.47 for 4 servings and 98 cents for 6 servings. Prices are from Weis Markets at the intersection of Dual Highway and Eastern Boulevard. Cost does not include salt and pepper.

14.75-ounce can pink salmon
1 cup uncooked quick oats
3 eggs
1 teaspoon salt
1/4 teaspoon pepper
2 to 3 tablespoons butter or margarine

Remove the skin and bones from the salmon. In a bowl, mix the salmon, oats, eggs, salt and pepper. Shape salmon mixture into 8 to 10 patties.

In a skillet over medium heat, melt the butter.

Brown the patties for 5 minutes on each side, until brown. Set a lid loosely over the pan to help the cooking process while allowing steam to escape.

Serves 4 to 6.
