In search of thrifty recipes

May 20, 2009

The Herald-Mail would like to publish penny-pinching, tasty recipes by thrifty cooks in the Tri-State area on the Food page every week.

Contact staff writer Julie Greene at 301-733-5131 or 800-626-6397, ext. 2320, or Include a daytime phone number.

Also include how many servings the recipe makes. We'll check supermarket prices and determine the cost per serving.

Cost per serving is $1.44 for 12 servings and $.72 for 24 servings. Prices from Martin's Food Market on Wesel Boulevard in Hagerstown. Includes ground beef this is 80 percent lean and 20 percent fat.

Pizza burger with Spam

2 pounds ground beef
Can of Spam
1 pound of yellow sharp cheese, shredded
12 to 15 ounces pizza sauce
2 cups mozzarella, shredded
12 hamburger buns
Salt and pepper, to taste

Preheat oven to 350 degrees.

In a frying pan, brown ground beef. Drain the fat.

Grate, grind or cut the Spam into little pieces. Add the Spam to the ground beef, cooking over low heat until Spam and beef are cooked through.

Add the cheddar cheese. Once the cheese has melted, stir in the pizza sauce.

Let the beef mixture sit a minute or two with the burner off so it can cool.

Open the hamburger buns for open-faced sandwiches.

Place a scoop of the beef mixture on each side of each bun. Top with shredded mozzarella. Salt and pepper to taste.

Place the buns on a cookie sheet and put them in the oven for about 15 to 20 minutes or until the mozzarella melts and the buns are toasted.

Cook's note: The beef mixture can be frozen.

Serves 12 to 24.
