Mom's Gooeylicious Cranberry Oatmeal Cookies recipe

2 sticks unsalted butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 cups oatmeal
1 6-ounce package of Craisins Orange Flavor Sweetened Dried Cranberries
6 ounces of white chocolate chips
15 caramel squares, with each candy cut into 20 pieces (see cook's note)

Cook's note: Coating the caramel bits with cornstarch prevents them from sticking.

Preheat oven to 350 degrees.

Cream the butter, sugar and brown sugar. Add the eggs and vanilla, and beat until light and fluffy.

In a separate bowl, mix the flour, baking soda, baking powder and salt. Add to the butter mixture and mix until completely blended. Fold in the oatmeal, Craisins, white chocolate chips and caramel pieces until evenly distributed.

Drop 3-tablespoon mounds of cookie dough onto a cookie sheet lined with parchment paper. Space mounds 2 inches apart. Bake for 11 to 13 minutes until cookies set, but still retain some moisture.


Yields 3 1/2 dozen cookies.
