Pumpkin Soup recipe

4 tablespoons butter

4 cups of canned pumpkin

2 cups of cooked, pured sweet potatoes

1 cup smooth peanut butter

6 cups of chicken broth

1 teaspoon black pepper

1 teaspoon salt

Sour cream and chives for garnish (optional)

Melt butter in a soup pot over medium heat. Stir in pumpkin, sweet potatoes and peanut butter. Add chicken broth, pepper and salt, and stir well until smooth. Reduce heat to a simmer and cook for 20 minutes. Garnish with a sprinkling of chives and a dollop of sour cream, if desired.


Serves 8.
