Passion Fruit Maracuja

1 1/2 ounces orange rum
1 ounce ginger-jalapeo infusion
1 ounce passion fruit juice
1 julienned jalapeo for garnish.

For the ginger-jalapeo infusion

1 cup of water
1 ginger root, peeled and coarsely sliced.
1 jalapeo, coarsely chopped
2 spoonfuls of sugar

Simmer ingredients for the ginger-jalapeo infusion at low heat for about two hours. Let it cool.

Combine the rum, the ginger-jalapeo infusion and fruit juice in martini shaker. Shake well, strain and serve in a chilled martini glass.

Garnish with a piece of julienned jalapeo.
