Quinoa

1 cup water
1/2 cup quinoa (see cook's note)
Pinch of saffron

In a medium-sized pot, bring water to a boil, then add the quinoa. Turn temperature down to low heat and cook for 15 minutes. Add saffron after quinoa is cooked.

Cook's note: Quinoa (pronounced kih-NO-uh) is a South American grain found in health food stores such as Whole Foods Market in Frederick, Md.

Serves 2.
