Open-Faced Turkey Sandwich

4 slices crusty herb or white bread
4 tablespoons cranberry/orange relish, divided
8 to 12 thin slices from a turkey roast (see note)
4 servings mashed potatoes, about 2/3 cup each serving (see note)
2 cups hot gravy, made from roast drippings

Cook turkey slices according to package directions.

Place each bread slice on plate and spread 1 tablespoon of relish on each slice.

Top bread with two warm turkey slices, 2/3 cup mashed potatoes and 1/2 cup gravy. Serve hot.

Notes: Leftover cooked turkey may be substituted for pre-packaged turkey roast.

Fresh, frozen or instant potatoes may be used.

Serves 4.
