Herb-Seasoned Potatoes

2 1/2 pounds baking potatoes, partially peeled and cut into chunks
2 teaspoons olive oil
1 1/2 teaspoons rosemary leaves, crumbled
Salt and pepper to taste
3 tablespoons chopped, fresh parsley

Heat oven to 350 degrees. Coat large baking sheet with vegetable spray. In a large bowl, combine all ingredients except parsley. Place potatoes on baking sheet and bake, turning occasionally, for about 45 minutes until tender and golden. Toss with fresh parsley before serving.

Serves 8.
