Sunday Brunch Casserole

1/2 pound bacon

1/2 cup onions, chopped

1/2 cup green pepper, chopped

12 eggs

1 cup milk

1 cup shredded cheddar cheese

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup sliced mushrooms (doesn't matter which kind)

12 slices of bread, cubed, about 1-inch squares or smaller


In a skillet, cook bacon until crisp, crumble and set aside. In the drippings, saut the onion and green pepper until tender and drain. Beat eggs and milk in large bowl. Stir in cheese, salt, pepper, bacon, onions, green pepper, mushrooms and cubed bread. Pour into 13-inch-by-9-inch-by-2-inch baking pan. Bake at 350 degrees for 35 to 45 minutes or until a knife inserted comes out clean. Note: Dish can be refrigerated overnight before baking.
