Annual ox roast offers beef just about any way you want it

Wondering where the beef is?

The answer is Quincy, where 2,600 pounds of beef will be roasted, ground, sliced and made into sandwiches and soup during 72nd annual Quincy Ox Roast this weekend.

The Ox Roast is a standing tradition in the small community of Quincy. But 72 years ago, things were done a bit differently, said Donald Gossert of Quincy, president of the Quincy Community Ox Roast Association Inc.

"Back then, they roasted an ox on a spit over an open fire," he said.

Gossert's wife, Molly, characterized the Ox Roasts of old as "primitive."

"We used to have them over at Benedict's Woods behind Twin Kiss," she said. "There was no running water, and we ate on china and silverware."

The Ox Roast might have traded in the china for paper plates, but the beef still is as good as ever, according to residents.

Dianna Kauffman of South Mountain, Pa., came in the rain on Saturday to enjoy one of the Ox Burgers served at the roast.

"I try to come every year for one of these," she said. "They are good."

The Quincy Community Ox Roast Association also upgraded from the spit and open fire method of roasting the beef.

"Today, we cook large chunks of beef over water heated by propane gas," Gossert said.

Gossert said that what once took roasters almost a day to cook he can do in about five hours.

Together with a "secret blend of seasoning," Gossert and close to 200 volunteers will serve more than 4,000 sandwiches to residents this weekend.

Proceeds from the roast will benefit the Quincy Street Lights and Community Activities. According to Molly Gossert, the Ox Roast began as a way to raise money for the streetlights, and it continues today in that tradition.

"Part of the money goes to pay the bill for the streetlights, part of it goes to charities," she said.

The streetlights line Anthony Highway from Nunnery Hill to the borough of Mont Alto, as well as some side streets in the township.

The Ox Roast offers more than just food to residents and visitors attending the four-day event. Each evening features bingo and live music, with car shows planned for Saturday and Sunday.

While the rain soaked the weekend, residents still came to enjoy the Ox Roast.

"This is what you do on Labor Day," Molly Gossert said. "I wouldn't think of doing anything else."

"I come every year for the music," said Buddy Debrick of Penn Mar. "While we need the rain, it is not enough to stop me."

According to Gossert, the Ox Roast will continue as planned through Labor Day.
