Seven Minute Frosting

3 egg whites (1/4 cup)

1 1/2 cups sugar

1/4 teaspoon cream of tartar

1/3 cup water

1 teaspoon vanilla extract

14-ounce bag Baker's angel flake coconut

Combine egg whites, sugar, cream of tartar and water in top of a double boiler.

Place over boiling water and beat until the mixture stands in soft peaks.

Scrape bowl and sides of pan occasionally.

Fold in 1 teaspoon vanilla extract.
