Honey-Roasted Vegetables

2 cups sweet potato, peeled and cut into chunks

1 1/2 cups turnip, peeled and cut into chunks

1 1/2 cups carrots, peeled and cut into chunks

1 1/2 cups white potato, peeled and cut into chunks

1 1/2 cups winter squash, peeled and cut into chunks

3 or 4 onions, cut into chunks

2 to 3 cloves of garlic, sliced

2 cups Brussels sprouts

1/4 cup honey

2 tablespoons olive oil

Combine all ingredients and toss vegetables to coat evenly with olive oil and honey. Transfer vegetables to a baking dish. Bake at 450 degrees for 30 to 35 minutes, stirring about every 10 minutes.

Vegetables and quantities can be varied to suit individual tastes.

Serves 8 to 10. Cost is about $11.50, or $1.14 to $1.43 per serving.
