Quiche aux Fines Herbes

1 cup heavy whipping cream

5 eggs

1/2 teaspoon salt

1/4 teaspoon pepper

1 teaspoon minced fresh chives

1 teaspoon chopped fresh parsley

1 teaspoon chopped chervil

1/2 teaspoon chopped tarragon

1 cup sliced fresh mushrooms

1 cup grated Swiss cheese

1 deep-dish pie crust

Mix cream, eggs, salt, pepper and herbs with wire whisk to combine well.

Fill bottom of pie shell with cheese and mushrooms. Add egg mixture.

Bake at 350 degrees for 15 minutes to set. Pull from oven and cover with foil. Continue baking for an additional 45 minutes.

Allow to cool before slicing.

Serves 4 to 6.
