Chopped Apple Cake

  • 4 cups apples, finely chopped

  • 2 cups sugar

  • 2 eggs, beaten

  • 1 cup vegetable oil

  • 2 teaspoons vanilla

  • 3 cups flour

  • 1 teaspoon salt

  • 2 teaspoons baking soda

  • 1 cup walnuts or pecans, chopped

  • 1 cup coconut


For icing:

  • 1 1/2 cup confectioners' sugar

  • 2 tablespoons milk

  • 2 teaspoons vanilla


Preheat oven to 350 degrees. Grease 13-by-10-inch baking dish. Combine chopped apples with sugar and let stand for 1 hour. Combine beaten eggs, oil, vanilla. Mix well. Add flour, salt, baking soda, nuts and coconut. Then add apple mixture. Mix thoroughly. Pour into prepared baking dish and bake for 40 to 45 minutes.

Mix icing ingredients together and spread over warm cake.
