Healthy Joys



  • 1 cup whole-wheat flour

  • 1 cup 7-grain bread flour

  • 1/2 cup oat flour

  • 1/2 cup oat bran

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon each:

    • Nutmeg

    • allspice

    • cinnamon

    • ground ginger


  • 1/2 cup brown sugar

  • 1/4 cup honey

  • 3 tablespoons canola oil

  • 1 medium egg

  • 3/4 cup plain, nonfat yogurt

  • 2 cups raw apple, chopped

  • 1/2 cup sunflower seeds

  • 1/2 cup butterscotch bits


Mix whole-wheat flour, 7-grain bread flour, oat flour, oat bran, baking soda, salt, nutmeg, allspice, cinnamon and ground ginger in large bowl with large spoon.

Mix brown sugar, honey, canola oil, egg and yogurt in medium bowl; beat with electric beater.

Add wet mixture to dry mixture; stir well. Add apple, sunflower seeds and butterscotch bits. Drop by teaspoonful on sprayed cookie sheet. Bake 15 minutes in a 375-degree oven.

Makes 80 to 90 "Joys."
