Grape-nuts Loaf

  • 2 eggs
  • 1 cup Grape-nuts cereal
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 3/4 cup nuts, chopped
  • 1 tablespoon onion, chopped
  • 1 cup celery, chopped
  • 2 tablespoons margarine


Beat eggs. Add remaining ingredients. Let stand for 20 minutes until moisture has been absorbed.

Place in greased 8-by-8-inch baking dish. Bake at 350 degrees for 40 minutes.

Serves 6.

Oatmeal Walnut Patties with Mushroom Gravy

  • 2 eggs
  • 1 cup oatmeal, dry
  • 1 cup ground walnuts
  • 1/4 cup evaporated milk
  • 1 medium onion, minced
  • 1 teaspoon salt
  • pinch of sage
  • 1 tablespoon soy sauce


Beat eggs and combine all other ingredients with them. Drop from spoon to form small patties. Brown on both sides in oil.

Cover with gravy. Bake at 350 degrees about 20 minutes, until hot and bubbly.

Mushroom Gravy
  • 1 can cream of mushroom soup
  • 1/4 cup skim milk
  • garlic salt and paprika, to taste
  • 4-ounce can sliced mushrooms


Blend soup and milk. Season with garlic salt and paprika. Add mushrooms.

Serves 6.

Note: To reduce fat and cholesterol, Brenda Griffin uses egg whites - not whole eggs. She sometimes serves Oatmeal-Walnut Patties with tomato sauce instead of mushroom gravy. Griffin uses canola oil to brown the patties, but says vegetable oil also works.
