Sweet and savory side dish is seasonal, festive, easy

The Associated Press

A side dish of Glazed Sweet Potatoes, Apples and Pecans, a combination of seasonal ingredients often used in traditional holiday cooking, would be welcome on any winter dinner table.

The flavor of the sweet potatoes and apples is balanced with maple syrup and cider, and the pecans give crunch to the texture.

Glazed Sweet Potatoes, Apples and Pecans

  • nonstick cooking spray
  • 6 medium sweet potatoes, peeled and cut crosswise into 3/4-inch slices
  • 1 teaspoon salt
  • 2 medium apples, peeled, cored and sliced 1/4-inch thick
  • 4 tablespoons butter
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup maple syrup
  • 1/2 cup apple cider
  • 1/2 cup chopped pecans

Preheat oven to 400 degrees. Coat a 13-by-9-inch baking dish with nonstick cooking spray.

Bring 3 quarts of water to a boil in a large saucepan; add sliced sweet potatoes and salt. Boil slices for 6 to 7 minutes, or until tender. Remove from heat; with a slotted spoon, transfer sweet potatoes to prepared baking dish. Add apple slices to sweet potatoes and stir to combine.

In a small saucepan, combine butter, maple syrup and apple cider over medium heat. Stir and bring to a boil, then remove from heat. Pour over sweet potato mixture; scatter pecans over top.

Bake in 400-degree oven 25 to 30 minutes, or until glaze thickens, sweet potatoes and apples are tender and pecans turn light brown.
