Applesauce CakeApplesauce Cake

  • 1 3/4 cups sugar
  • 1 1/2 cups unbleached flour
  • 1 cup soy flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon baking powder
  • 2 cups applesauce
  • 1/2 cup vegetable oil
  • 1/2 cup soft tofu
  • 1 cup raisins, chopped


Preheat the oven to 350 degrees. In a large bowl, combine the sugar, unbleached flour, soy flour, baking soda, salt, cinnamon, cloves, allspice, nutmeg and baking powder; mix thoroughly. Add the applesauce and vegetable oil; mix well, then beat about 300 strokes.

In a small bowl, mash the tofu until creamy; add to the batter. Beat the batter about 300 strokes. Fold raisins into the batter. Pour the batter into a 9-by-13-inch nonstick baking pan. Bake for 45 to 50 minutes. Cool before serving.

Serves 18.

Nutritional information per serving: 240 calories; 2 grams protein; 7 grams fat; 44 grams carbohydrates; 24 percent fat.

Sloppy Joes

  • 1 cup textured soy protein
  • 1 cup boiling water
  • 1 16-ounce can sloppy joe sauce
  • 4 whole-wheat hamburger rolls


To rehydrate the soy protein, place it in a medium saucepan and pour the boiling water over it. Add the sloppy joe sauce; cook over low heat until heated through. To serve, pour the soy mixture over the hamburger rolls.

Serves 4.

Nutritional information per serving: 196 calories; 15 grams protein; 2 grams fat; 32 grams carbohydrates; 10 percent fat.
