Easy seafood recipes make entertaining a snap

With some planning, you can entertain family and friends with style, elegance and ease.

Surimi seafood offers a delicious and easy choice for a variety of dishes. Made from fresh North Pacific whitefish, surimi's mild, slightly sweet taste can enhance your favorite seafood recipes. It's fully cooked and works well in virtually any hot or cold recipe.

The Menu: A good rule of thumb for cocktail parties is to allow four appetizer selections for the first 15 guests and add another selection for every eight additional people. Serve choices of both hot and cold dishes.

Lobster AlfredoLobster Alfredo Pasta Primavera

  • 3 cups dry penne pasta
  • 1 tablespoon olive oil
  • 1 cup diced zucchini
  • 1 cup sliced fresh mushrooms
  • 1/2 cup diced red bell pepper
  • 1 tablespoon chopped garlic
  • 1/2 cup dry white wine
  • 2 cups Alfredo sauce
  • 1 package surimi lobster
  • 1 teaspoon dry basil leaves
  • 1 1/2 teaspoons lemon juice


Cook pasta according to directions. Heat oil in a large saucepan over medium high heat. Add vegetables. Stir for 1 to 2 minutes. Add garlic, then add wine. Stir in Alfredo sauce, lobster, basil and lemon juice. Cook until heated through.

Serve over cooked pasta.

Serves 3 to 4.




Crab dipCreamy Crab and Artichoke Dip

  • 8 ounces cream cheese, room temperature
  • 1 cup mayonnaise
  • 1 package surimi crab
  • 1/3 cup chopped onion
  • 13.75-ounce can artichoke hearts, drained and chopped
  • 3/4 cup shredded Parmesan cheese


Preheat oven to 375 degrees. In medium mixing bowl, blend together cream cheese and mayonnaise until smooth. Stir in remaining ingredients and place mixture in glass pie plate. Bake, uncovered, for 15 to 18 minutes, until heated through and lightly browned.

Serve with crackers or French bread.

Serves 4 to 5.




Spinach dipZesty Spinach Crab Dip

  • 8 ounces cream cheese, room temperature
  • 1/2 cup mayonnaise
  • 1 package surimi crab
  • 1/2 cup chopped, roasted red peppers or pimientos
  • 3/4 cup shredded Parmesan cheese
  • 3/4cup grated pepper Jack cheese
  • 1 small box frozen spinach, thawed and drained well
  • 1/2cup chopped onion
  • 2 to 3 teaspoons chopped pickled jalapeos, optional


Preheat oven to 375 degrees. In medium mixing bowl, blend together cream cheese and mayonnaise until smooth. Stir in remaining ingredients and place mixture in a glass pie plate. Bake, uncovered for 15 to 18 minutes, until heated through and lightly browned.

Serve with crackers or French bread.

Serves 4 to 5.
