Zucchini Bread

3/4 cup egg substitute

1/2 cup canola oil

1/2 cup applesauce

2 cups sugar

3 teaspoons vanilla

3 cups flour

1 teaspoon soda

1 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon baking powder

2 cups zucchini, grated

1 cup raisins

Mix first four ingredients. Beat until fluffy. Add remaining ingredients. Spray two bread pans with nonfat cooking spray. Fill pans half full. Bake at 325 degrees for one hour. Makes two loaves of 12 slices each.

Easter Paska

1 1/2 cups skim milk, scalded

1/4 cup sugar

1/4 tablespoon salt

1/2 cup butter, melted

3 beaten eggs or equivalent egg substitute

1/4 cup lukewarm water

1/2 large yeast cake

6 to 7 cups flour

Combine milk, sugar, salt, butter and cool to lukewarm. Save two tablespoons of eggs and add the rest to the milk mixture. Crumble yeast in water and let stand for 10 minutes. Add to mixture. Add flour about one cup at a time and mix. Knead. Place dough in greased bowl. Let rise 1 1/2 to two hours. Knead again and let rise a second time for 45 minutes to one hour. Shape into two loaves. Place in greased pans and let rise another 45 minutes. Brush with reserved eggs. Bake at 325 degrees for one hour. Makes two loaves of 20 slices each.

Amaranth Bread

1 cup water

3 tablespoons light margarine

1 tablespoon sugar

1 teaspoon salt

1/2 cup amaranth flour *

2 1/2 cups bread flour

1 1/2 teaspoons fast-rise yeast

Mix all ingredients together. Allow to rise one hour. Punch down. Place in baking pan. Allow to rise for one hour in a warm place. Bake at 350 degrees for 30 to 40 minutes. Makes one loaf of 14 slices.

* A flour made from the seeds of the amaranth plant. It is available at health-food stores.

Strawberry Banana Bread

1/3 cup skim milk

1 1/2 tablespoons light margarine

1 1/2 teaspoons sugar

3/4 teaspoon salt

2 1/2 cups bread flour

1 1/2 teaspoons rapid-rise yeast

1/3 cup strawberries, mashed

1/3 cup bananas, mashed

Mix all ingredients except strawberries and bananas throughly. Add strawberries and bananas. Mix in well. Allow to rise for one hour. Punch down. Place in baking pan and allow to rise for one hour. Bake at 350 degrees for 40 to 45 minutes. Makes one loaf of 14 slices.
